The unabashed protagonist is the dim sum, presented in an alternative version "by night". In Chinese tradition, dim sum refers to a meal represented by a succession of small plates that accompany morning tea and family lunches. Here, the small dishes form a menu that can easily provide reprieve during an aperitif, compose an entire dinner, or complete a late night drink. All with whim and freedom.
